My favourite Cookbooks on the internet!

Hi altogether!

Here I am again, this time I would like to share my favourite cookbooks. I have tried them out myself and I have to say I was surprised - and my hubby as well!!

First on my list has to be this piece of gold:

The copycat Recipes Cookbook - Divine Recipes Click Here!

It contains hundreds of Recipes from all your favourite restaurants...even pizza hut!

I have tried like 34 so far and I have to say that the descriptions are very easy to follow and the recipe tastes just like when you order it in the restaurant! Yummy

The second cookbook I would like to talk to you about is the Jamaica Recipes cookbook Click Here! !!

I discovered this piece of gold when I had my hubby's friends over for dinner for the first time. I wanted to make a good impression and then I wasn't too stable in turning poundy ;-)

So I googled for recipes - and there it was Jamaica Recipes cookbook Vol. 1 Click Here!

There is three recipes I really fell in love with:

The curried lobster
The jerked chicken
The banana porridge (especially adored by my son)

So guys/gals if you want to surprise your family and friends with some "rastafarian food"
Jamaica Recipes cookbook Click Here! is just the thing for you!!

Enjoy!

Jollof Rice

Hi Dears,

today I would like to share one of my favourite recipes with you: Jollof Rice!!

First of all the ingredients (for 6-8 people):

- 4 cups (or one litre) white rice
- 2 fresh tomatoes OR 1/4 litre canned tomatoes and 90ml tomato paste
- 1 bell pepper (remove seeds if you don't like it too hot)
- onions
- salt
- dry pepper (cayenne pepper if you don't have african pepper at hand)
- about 4 Maggi Cubes OR 1/4 litre meat broth (that is the water you used to boil the meat)
- water

So now we are ready, let's cook:

1. Unless the rice is clean you will like to rinse it before cooking it.

2. Put the rice and about 6 cups (or about 1½ liters) of water into a pot and place on high heat. (Some people prefer to boil the water and add the rice to boiling water. This is fine too.)

3. If you are using fresh ingredients (the tomatoes and pepper) blend them until they are smooth in texture (you can also grind the onion with this mixture).

4. Let the rice cook 10-15 minutes.

5. Add either the tomato/pepper mixture or the tomato sauce and tomato paste. If you have not added the onion, you can slice or dice it now and add to the pot, depending on how large you like your onions.

6. Add enough water to allow the rice to complete cooking (since you will not be draining the rice, it is better to add too little and check up on it often, than to add too much).

7. If you have any meat broth from boiling any meat, you can add it to this as well. Otherwise, unless you are a vegetarian, suggest adding about 4 magi cubes for taste.

8. Add about 2 teaspoons of salt, and about ½ a teaspoon of dry red pepper (as the rice is cooking, or as you are eating the finished product, you can add more of either one of these so I really suggest starting out small, also useful if different people who will be dining have different tastes).

9. Allow the rice to continue cooking until the rice is soft. If it is not dry at this point, then switch the heat to low to allow it to dry the excess water without making the rice much softer. (Also, some people prefer to bake it once they've added the ingredients...I suggest 350 degrees or so.)

10. Once cooked, add more salt or pepper to it if you wish.

Bon appetite!!

Why "Euroafrica"?

Hi everybody,

why is this page called euroafrica, everybody is going to ask himself? Well, the answer is clear I'm german, my son is half german-nigerian and my husband is nigerian...so there is the first bridge. The second reason is, that I thought of sharing a lot of information from both africa and europe.

I would like this to be a very informative site and everybody is welcome to share his or her own, experiences, cooking recipes, tips and tricks for daily life between here and africa on my site.

I would just like to ask to be friendly and polite to each other that is all!!
